The Lansky Deluxe Sharpening system is designed to give your knife razor-sharp cuts every time. The patented Lansky system makes it easy to always sharpen at a constant angle that ensures optimal results. You attach the knife in the clamp after which, thanks to the guide system, you keep a constant angle while sharpening. The Deluxe System includes grinding wheels made of aluminum-oxide and ceramic. This sharpening system particularly excels with knives up to ~12 cm blade length. Longer knives can also be sharpened with this system, although you will find that the angle will vary somewhat.

Determining the grinding angle

On the Lansky sharpening system, you can select four sharpening angles. These angles are fixed, so you keep the same angle constantly while grinding. To find out at what angle to sharpen your knife, you can usually consult the manufacturer. If the manufacturer does not have this information readily available, you can also find out for yourself what angle to use. You do this through the so-called “felt-tip” test. Using a waterproof marker, draw a line on the fold of the blade and carefully sharpen a piece with the possible sharpening angle. You can tell from the disappeared part of the line whether the angle is right, or perhaps should be larger or smaller.

The Lanksy system has the following angles:

  • 17 degree angle – usually used for Japanese knives and razors. This angle provides a very sharp, but delicate, cut.
  • 20-degree angle – a common setting for most knives with high-quality blades. A 20-degree sharpening angle is usually perfect for kitchen knives.
  • 25-degree angle – most knives that require a long-lasting sharp cut, such as hunting knives and outdoor knives, are sharpened at this angle.
  • 30 degree angle – blades that are heavily used, such as wood, carpet or wire cutting, stay sharp for a long time at this angle. Recommended if you expose your knife to such harsh conditions.

You always sharpen the knife one side at a time with the Lansky sharpening system. To sharpen the other side, turn the knife with holder over, or place the knife in the clamp the other way around.

The sharpening system comes with five stones and comprehensive instructions for use, so you can get started quickly.
